A Proper Bake Off

Time and time againwe see Cornish Pasties appear in shop windows across the UK, poorly presented, poorly marked up and poorly baked.  At Proper Pasty Company, we feel that the quality of the pasties appearance is paramount to the sales process!

Our products are pre-basted during manufacture, this provides a light golden sheen to the pastry during the bake-off process, but that’s not where it ends!  After about 40 minutes our baker takes the Cornish Pasty out of the oven and applies a second baste which turns the golden sheen to a golden glaze, a perfect shade of gold for the pasty…that’s why you see the gold emblem of a pasty in our logo, this is how a cornish pasty should be presented.  That final 10-15 minute bake after the second baste produces the perfect pasty.

The window displays are also key to the sales process!  Displaying an abundance of product in the front window, tiers of baskets holding a wide varierty of pasties is the next important thing to the bake-off process, then labelling…let the customers know what they are looking at…the description needs to draw the customers appetite!

Why do we love Cornish Pasties?

What is it a about Cornish Pasties that we love?  Is it the secret seasoning that those nasty Cornish people mix with the locally farmed vegetables that makes us crave them fortnightly?  Is it the myriad of flavours that are offered that tempt us back to discover the next mouth watering serving?  Or can it be that they put something else in the cornish pasty that makes us crave the golden cased meal?

In our opinion there are many different reasons as to why we love the pasty, but it is reliant upon one thing and one thing only…your first experience of a true cornish pasty, not the type that Greggs or Bakers Oven put in the window, these are not original cornish pasties!!  No these are a hybrid of the authentic oggy, they are filled with ground beef, a very thin layer of vegetables and air… a true Cornish Pasty is cram packed full of goodness…take one apart and you will see that the pastry case traps a bounty of fresh localy farmed vegetable, the finest meat content, whether it is Lamb, Chicken or Steak…there is little room for air!

The Cornish Pasty also reminds us of those summer holidays in the South West, sitting on the beach with mates watching the surfers in Newquay whilst biting into a Lamb & Mint Cornish Pasty and washing it down with an refreshing bottle of Cornish Ale!  Happy Days

Traditional Steak Cornish Pasty

By far the favourite of the Cornish Pasty family, the Traditional Cornish Steak Pasty recipe has evolved through the ages straying only very slightly from original Cornish Pasty recipes.

The Real McCoy, freshly prepared potato, swede and onion, layered with prime Cornish steak and infused with the very secret seasoning!
( encased in short crust pastry). This pasty is normally served in small, medium, large and Giant sizes!…although the Giant Cornish Pasties are not for the faint hearted! Cornish Pasty manufacturers pride themselves on farming the pasty ingredients locally…that is the tradition!

The Great Cornish Pasty Debate

The perfect Cornish Pasty has to come from Cornwall first and foremost! There is a long standing debate in the heart of  manufacturing Cornish Pasties, laying claim to authentication…how can a Cornish Pasty be a Cornish Pasty unless its been made in Cornwall? These debates go on and on, do Yorkshire puddings have to be manufactured in Yorkshire! Arguments ‘for’ and ‘against’ ensue, all we know is that as Cornish Pasty connoisseurs we only trust the original, the Pasty that has been hand crimped and hand filled in a Cornish factory…could there be any other?

The characteristics of the Proper Authentic Cornish Pasties are

a) Hand Made (not machined please!)
b) Cornish origin (they get our vote)
c) Smuggled via the A30 (the second best thing to come out of Cornwall)
d) Authentic Cornish Vegetable ingredients

g) A hand crimping to the side…not on top like a Stegasaurus!

The Anatomy of the Cornish Pasty

The appearance of the Pasty, in our opinion, is side crimped first and foremost. The crimp on the roof is probably the most common home-made style of Cornish Pasty, it’s the way your Mum makes them, but we feel that the Pasty is best eaten holding the side crimp as a handle so that a ‘true bite’ can be delivered, resulting in an optimum meat and/or vegetable mouthful!

The quality of the Pastry is a key factor in the quality of the best Cornish Pasties, whether it is Flaky of Short Crust Pastry it must be consistent.

Hand layering is a tradition handed down through the production process, machines deliver a more uniform fill we agree but it doesn’t deliver authenticity! A hand made pasty must be hand made, like a Bentley or a Rolls Royce, this Cornish culinary delight upholds the tradition of all things hand made and high quality.

Diced, not sliced! The vegetables in Proper Cornish Pasties should be diced as should the meat. The dicing process contributes to the eating experience of true Cornish Pasties, solid chunks of hand trimmed Chuck Steak, Chicken Breast, Suede and Potato are amongst the finest of the chunky ingredients in our Pasties.

Last but not least, Cornish farmed vegetables are vital ingredients to Authentic Cornish Pasties.
